Heat a dash of oil in a nonstick frying pan or electric griddle over medium heat. In a large bowl, thoroughly combine flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Set aside. In a different bowl, whisk together the applesauce, Rockview® Low Fat Buttermilk, vanilla, and eggs. Whisk wet ingredients into flour mixture. Use about 1/4 cup of batter for each pancake, cooking until the batter begins to bubble and the sides of the pancake appear dry. Flip the pancake and cook for about 3–4 more minutes.
